Can you please explain what the two 'Ultimate' features, Advanced Field Mapping & Advanced Filter Syncing are and how the they differ from the features offered in the Professional and Basic versions

Hello, I'm happy to help with this. Sorry for the slow response, we're based out of the USA. Which edition of SugarChimp you need depends on how you want/need to use your Sugar data in MailChimp.
SugarChimp Basic includes a two-way sync between your Sugar Contacts, Targets and Leads and your MailChimp Subscribers. In Basic, you have to manually make sure your lists are up to date. For example, if a new lead is added to Sugar, you have to manually add them to the synced Sugar Target List so that they make it to your MailChimp List. You can sync any fields that are on the Contact, Target and Lead modules to your MailChimp subscribers.
SugarChimp Professional includes everything in SugarChimp Basic, except that you can set it up to automatically sync all of your Contacts, Targets and Leads to MailChimp without any manual work. So if a new Lead is added to the system, it will automatically be added to the MailChimp side. You can sync any fields that are on the Contact, Target and Lead modules to your MailChimp subscribers.
SugarChimp Ultimate gives you all of the flexibility of who makes it into MailChimp and what data you want in MailChimp. With SugarChimp Ultimate you can create special filters to determine who makes it into MailChimp, unlike SugarChimp Professional where you sync everyone to MailChimp. With SugarChimp Ultimate you automatically sync different subsets of your data to MailChimp. The other big difference is that you can sync related data from a Contact, Target or Lead to MailChimp. Say you had important marketing related fields on the Accounts module (account type, account location, etc.), when we sync the data for a Sugar Contact to MailChimp, you could include the Contact's related Account data, and be able to segment on that when you're sending your MailChimp campaigns.
It all really depends on what you are trying to accomplish in MailChimp and how your data is structured in Sugar. I'd recommend starting a trial and seeing how it works, it's completely free to do. You can also switch between each edition once you install the integration to see what works best for you.
