Hi, Would the signature captured this way be legally recognised? Or is it useful anyway as 'most' customers will probably think it is? :-P

I think this is recognised. because in the market so many product available which are capturing e-signature to fast and easy the process between client and vendor.

Not sure how 'other systems' are implementing this to help make it legal, but I did hear some time ago that some engineering apps also record the precise map co-ordinates as well as date/time when signature is saved.
